Our story

We are a multi-generational Texas business. I am a sixth generation Texan. My great great great grandfather William Houston Jack started the war with Mexico in Anohuac by firing shots at Mexicans who wanted to tax his wagon of hay. Word got back to Sam Houston and the war was on. Jack fought at Gonzales, San Jacinto, and was the first Secretary of State for the Republic of Texas.

The family tradition continues with a conservation ethic of sustainable ranching so water in the Edward's Aquifer is conserved and ready to drink for hundreds of thousands of Central Texans. The beef you buy here has a donation component to Texas Beef Initiative, the non-profit my cattle partner started that has fed over 300,000 hungry Texans in just two years. I hope y'all enjoy this beef and know it helps recharge the aquifer and feed Texans in need, including veterans, women and children saved from sex trafficking, and women and men in rehab for drugs.
