We have worked 6 years on curating the perfect Brangus Wagyu herd, and have experimented with all kinds of genetics and all kinds of specialized cattle management techniques, and have come up with the most efficient way of getting a supreme Wagyu product with the least amount of impact on the land.

Conservation is one of our key missions on the ranch, as is best land management practices to ensure that there is a sustainable program that needs the least amount of purchased hay and supplements. Our ranch is under conservation easement to protect watershed recharge into the Edwards Aquifer. 

We strive to keep prices low for our customers, while at the same time creating one of the best Wagyu beef products in the country. The sweet Central Texas grasses imparts a natural, nutty flavor to the meat, and dry aging for 2-3 weeks further changes the chemical nature of the beef so it becomes even more tender and delicious.

The Story of Neu Wassenberg Beef


The beef is a cross between Wagyu bulls who impart 70% of their marbling to the Brangus mama cows who are known for their efficient metabolism and heat tolerance. The pregnant cows eat sweet Texas grasses from the ranch that give the meat its unique nutty flavor when cooked. It has taken six long years to get the right genetics and proprietary omega three grain finish to make the superior product. No hormones or antibiotics are ever used. Just a plant-based fly dust and a wormer that is completely out of their system at processing time. The steers and heifers are ultrasounded before processing to make sure they grade prime. I hope everyone loves it and knows the health benefits of the high Omega 3 fats. They mitigate the Omega 6 fats and are heart and brain healthy.
